1 cup cooked brown or white rice 3/4 cup shredded Swiss cheese 3 cups frozen chopped broccoli, thawed, drained 1/2 cu mushrooms, sliced 1/4 cup sliced green onion 1 tablespoon all purpose flour 1 red bell pepper, sliced into thin rings 1 1/2 cups Egg substitute 1 cup skim milk 3/4 teaspoon salt 1/2 teaspoon hot pepper sauce 1/2 teaspoon dried basil leaves 1/8 teaspoon pepper 2 tablespoons shredded Parmesan cheese
Heat oven to 350 degrees. Spray 9 inch pie plate or quiche pan with nonstick cooking spray, set aside.
Combine rice, Swiss cheese, broccoli, mushrooms, green onions and flour in large bowl. Spread over bottom of prepared pan. Arrange red pepper rings over mixture.
Combine all remaining ingredients except Parmesan cheese in medium bowl, mix with fork. Pour over vegetables. Sprinkle with Parmesan cheese.
Bake, uncovered, 50 to 55 minutes or until a knife inserted in center comes out clean. Serve immediately.
